Bread and Butter Pudding

Alright, this is another simple yet classic dessert. Got stale bread in your fridge? Bread and butter pudding is the way to get rid of them, the delicious way...

The recipe below have been tested and proven. Took me a half hour to whip things together, chuck it into the oven, and it was in our tummies within the next hour or so. My husband loved it so much, he said it was orgasmic.

Here goes...

Ingredients:
6-7 slices wholemeal bread
Just enough of butter
2 large eggs
400ml UHT milk
50g castor sugar
1/2 tsp vanilla essence
Generoud sprinkling of black raisins

Optional ingredients:
3 tbsp yoghurt (strawberry flavoured)
1 slice tinned apricot or peach, chopped coarsely

Method:
Cut bread into triangles and butter the slices. Whisk eggs until fluffy and add in the milk, (yoghurt), sugar and essence to combine.

Lightly butter an oven-proof dish and arrange the bread slices so that they overlap each other slightly. Scatter (the chopped apricot or peach) and raisins all over the mixture.

Pour egg mixture over and allow the mixture to run into the bread slices soaking it through. Bake the pudding in a preheated oven at 180°C for 40-50 minutes or until cooked through.


We had it with a scoop of vanila ice-cream.
